Just wanted to wish all of you (especially my Irish friends) a Happy St. Patty's Day! Being that I am 1/2 Irish, as is Eric (and Grady, obviously), I made a nice Irish meal last night (because I would have more time to prepare on a weekend). I did Shepard's Pie because (a) Irish people don't really eat corned beef and (b) we both hate it. I also made Irish Soda Bread for my first time, and it came out pretty good! Eric had some Guiness, but I am not really a fan. Tonight I made salmon, which also happens to be a big Irish food! It wasn't an Irish recipe or anything, but it was pretty yummy. I am making an effort to cook fish more and have plans to introduce G to tilapia soon. I hope to make some fish sticks or something.
I have a fun Grady story too - the boy is now OBSESSED with grapes. No, seriously, it is over the top. He wants to eat them more than anything and will take whatever he is chewing out of his mouth if I put a grape on his tray. He calls them "balls" and furiously signs "more" and points at the bowl for the entire meal when I have them out.
Eric is installing our speakers tonight, and I just finished some chores. I got some flowers today with Grady, and I plan to plant them in our hanging baskets and window boxes tomorrow. I did all purples and yellows, which should be nice for spring! I'll post pictures when I finish!
